This southern region of Ethiopia has a reputation for clean, tea-like coffees and this naturally processed offering from the Koke washing station is no exception. Unlike many naturals which might present loud and funky, this coffee has outstanding clarity due to selective harvesting and detail-oriented processing.
Standing on the side of a hill, coffee processed at Koke is grown at varying altitudes above and below the station. For many years all of these coffees were treated equally, heaped together and processed as a single unit. However Koke has recently begun to separate the cherries of higher elevation for our partners at Ally Coffee and the quality clearly shows.
Hand-picked at optimum ripeness and sundried on raised beds for nearly three weeks, Koke boasts an incredible balance of sweetness and clarity.
